Cafe Review: The Paramount Coffee Project

Paramount Coffee Project seem to have cemented their status in Surry Hills as one of the most popular cafes with great coffee to match their reputation. Emphasis is placed on coffee preparation to ensure the quality is maintained in every cup of coffee. You'll find a unique selection of espresso flavours and blends that have yet to be found at other cafes.

The cafe's layout was surprisingly quite spacious and there is also a little seating area at the back to relax and wait for your table. You'll find plants placed throughout the interior, some are strung up whilst others are placed nicely as a centrepiece on the table. It adds a great pop of colour and creates a lovely vibe.

The soft baked eggs that I ordered was definitely interesting. I think I was expecting a dish that was similar to a shakshuka but the habanero salsa had a mild spicy kick which you could taste with every bite. The contrasting flavours of the salsa and the housemate labneh left me wanting for more. Crispy kale on the side made it a light option for brunch and the perfect way to start the day. On the downside, their garlic toast was hard to eat. Perhaps regular sourdough bread may have been a better option to pair with the baked eggs instead. 

I also ordered my standard latte because you just can't go wrong with coffee at cafes. I desperately needed a caffeine hit because I had woken up really early to go to the gym. It's the weekend and that's what people do right? Nope, it's to make up for the extra eating I was about to get myself into. It's the weekend though so it's cheat day! Can you really blame me though. 

But for real, the highlight of the day was the crumbed eggs which my friend said was delicious. Just imagine a runny yoke oozing out from a crumbled egg and onto a piece of sourdough. Okay, I think you get what I'm trying to say. I have major regrets for not ordering it because it looked amazing.
